Garlic and Herb Chicken Nugget Bites

What? Did you say CHICKEN NUGGETS?…. yes, yes I did…

You mean delicious, naughty, lets have a treat, CHICKEN NUGGETS?… pretty much, yeh…

Like KFC, McDonalds, Burger King etc CHICKEN NUGGETS?… well no, these are healthier and get this, they are even tastier….

WWWHHHAAATTT!!!

That’s pretty much the conversation I had in my head when I made these bad boys. When eating healthily its all about finding alternatives for the bad foods you may be craving. And the best part of that is that they usually turn out to be tastier than the original! But that’s no surprise really, if you have ever seen the exposé’s on the ingredients of chicken nuggets you will know that they are generally made with every part of the chicken except the meat…. anything goes when it comes to those bad boys! But not these ones… You are making them from fresh in the wonderful knowledge that it is just 100% chicken breast going in along with NO added salt, preservatives or additives…. In fact, this recipe came around as I was totally craving one of my favourite child hood meals – chicken kiev, broccoli, rice and sweetcorn. I used to chop it and mix it all up and devour it so quick… but as I am no longer a child (most the time anyway), and also rather more health conscious, I decided to make my own, more refined ‘adult’ version 🙂 (as you can see from the picture, I still had the rice, broccoli and sweetcorn, and yes I did chop and mix it all up together!)

Has anyone ever told you its dangerous to dribble on your keyboard? I better get on with the recipe to prevent any further injury from dribble induced electric shock… so here goes….

  • 1 Chicken Breast, sliced
  • 2 Tablespoons Almond Flour
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Mixed Herbs
  • 1 Egg, Whisked
  • Olive Oil
  1. In a bowl, mix together your almond flour, garlic powder and mixed herbs.
  2. Pour your whisked egg into a separate bowl and place next to the bowl of dry mixture.
  3. In a shallow frying pan, pour about 2-3 tablespoons of olive oil (you just want a shallow pool) and heat until very hot.
  4. Take a piece of your chicken, dip into the egg and then roll in the almond flour mix until it is fully coated.
  5. Gently place into the pan and cook for about 4 minutes, turning in between (make sure it is golden on both sides)
  6. Repeat this process for each piece of chicken (you can do it one after the other and have lots in the pan at once – space permitting!)
  7. Serve with anything of your choice! Potato’s and veg… home made chips and salad…. the choice is yours 🙂
